After
one hour the onions should start to take on some color, and the
potatoes closest to the sides of the tray may begin to soften
and brown. At this point use a spoon or spatula to mix and
redistribute the potatoes and onions on the tray. This
will also mix the olive oil and seasonings with the potatoes
again. If you're a garlic lover like we are, take this
opportunity to add another teaspoon of

Return
to oven for another hour. Potatoes are done when a fork
penetrates easily and they feel soft but not mushy. If
they are overcooked and mushy, you just made yourself the best
garlic mashed potatoes- just add butter, milk, sour cream, and
smash!
