Ribeye Steak

Grilling steak is probably one of the most manly clichés of BBQ.  Grunting heavily and hopping around the hot grill to the sizzling sounds of beef on hot coals.  Unfortunately this ritual has become more about overpowering sauces and (say it's not so!) designer ketchups than the expensive meat we work so hard to prepare.

Well guys, it's finally safe to go back to the grill.  With MSG-free SkippyP's Monster Garlic Seasoning you can enhance the flavor of your beef without losing the cow.  Here's our recommended preparation.

Apply a light dusting of Monster Garlic to each side of the steaks- serving size is 2 teaspoons; that makes 1 on each side.  We like to do this right before lighting the charcoal, but it works just as well hours in advance or right before grilling.  If you really want to sleep alone, add a double dose of Monster Garlic... but don't say we didn't warn you!

How long to cook steak is always a question of preference.  We like ours medium.  Always plan time in the cooking schedule to allow the meat to rest.  As it cools it will redistribute the juices and keep in more flavor.  Make a foil tent over the finished steaks for a good 10 minutes or so before serving.

As with any meat, slicing across the grain yields a tender bite while in-line with the grain will allow you to chew until your dentures are worn.  Ribeyes pose a challenge since the inner core of meat is ringed by a beef layer that is a different grain direction and texture.  Shown here is one we sliced for show- you'll typically get a more tender and satisfactory steak when you cut it yourself.  Just before slicing is another opportunity to make the beef flavor POP with a dash of Monster Garlic Seasoning.  Notice the resting period gives a juicy steak without a puddle running off the cutting board.

At SkippyP's BBQ Catering all of our recipes have been thoroughly tested.  We feed friends, family, neighbors, and just about anyone walking by our home to get opinions before any recipe ever makes it to our catering kitchen.  This ribeye recipe, served with sautéed onions, sugar snap peas with garlic slivers, and parmesan roasted sweet & white potatoes, keeps them coming back long after we worn out our culinary welcome ; ).  It's also terrific served with our Garlic Roasted Potatoes which also feature SkippyP's Monster Garlic Seasoning.  Do you prefer a more down home flavor? maybe with Gulf Coast appeal?  Use our Creole Country Season All in place of Monster Garlic.  You won't be disappointed.

Let SkippyP's BBQ Catering grill up some Ribeyes for your next graduation party, wedding, company picnic, or family meal.  We can prepare a full buffet or just drop off a packaged dinner.  And try SkippyP's BBQ Sauces and Rubs for your next cook.  We know you'll enjoy.
