Add all
of the ingredients (except the reserved brisket and peppers) to
the crock pot and set on high. Stir to combine- don't
worry about the tomato paste lumps, they'll cook out over time.
Keep crock pot on high until the contents are very hot and
bubbling around the edges; stir, change setting to low, and
allow to cook for about 12 hours, stirring occasionally.
This is a terrific recipe to start in the evening and then leave
overnight to cook. PLEASE be
careful that there is plenty of liquid in the pot and your crock
pot is safe to leave while you're in bed.


The next
morning (or after 12 hours) stir the beans and check the liquid
level. The beans are still very firm, so add water to
cover if they have absorbed what was in there. This is
also the best time to adjust the seasonings. Add
Skippy's BBQ Sauce for more
BBQ flavor and brown sugar if you like a sweeter bean.
Continue cooking, adding liquid if necessary, until the beans
are the desired tenderness. We've found this can happen
between 18 and 24 hours, depending on how you like you beans.
When the
beans are about as tender as you like them, add the chopped
brisket and stir. For a special touch, transfer the beans
to an oven safe pan and place in your smoker for an hour (or
until ready to serve). When fixing for ourselves this is
when we like to top with peppers and a sprinkle of brown sugar.
