| Garlic Roasted Potatoes with Onion |

This is a very simple dish consisting of one pound each red potatoes and white potatoes, a large red onion, a large white onion, and garlic powder. The potatoes have been quartered, taking care that the pieces are of similar size to assure even cooking. The onions were also chopped to a size similar to the potatoes. On a foil lined baking tray or cookie sheet (one with a lip), drizzle the potatoes and onions with olive oil and toss to coat. Sprinkle on 1 tablespoon of garlic powder and toss lightly. Preheat the oven to 325°F.
After one hour of baking, the onions should start to take on some color, and the potatoes closest to the sides of the tray may begin to soften and brown. At this point use a spoon or spatula to mix and redistribute the potatoes and onions on the tray. This will also mix the olive oil and seasonings with the potatoes again. Potatoes are done when a fork penetrates easily and they feel soft but not mushy. If they are overcooked and mushy, you just made yourself the best garlic mashed potatoes - just add butter, milk, sour cream, and smash!
